Post-Workout Dessert: Apple Cobbler Balls
Missing your favorite apple desserts? I always do, but not anymore! I get a kick out of reimagining my favorite dessert as a health food and then figure out the best and healthiest ingredients to make it come to life and satisfy a craving. Just one or two of these will do the trick.
Ingredients:
2 scoops of vanilla protein powder
¼ cup chopped walnuts
3 tbsp. rolled oats
2 tbsp. Flaxmeal
2 tbsp. Chia seeds
1 tbsp. Psyllium husk powder
½ tsp. Nutmeg
1 tsp. cinnamon powder
½ tsp. cinnamon extract
½ tsp. Vanilla extract
1 tbsp. Molasses (or honey)
¼ cup unsweetened applesauce
Directions:
Mix dry ingredients into a medium bowl. Add the wet ingredients. Stir with a wooden spoon until mixture becomes doughy. Using a teaspoon, shape dough into balls. My recipe made twelve. Store in an airtight container and chill in the refrigerator. I would store these in the refrigerator or for up to several hours with an ice pack. It should be fine to store at room temperature out of heat or sun for short periods of time.
These make a snack or small meal. The extra protein and fiber will sustain you for a good few hours.
Enjoy!
